Peri-Peri Chicken

I’ve been meaning to do this recipe for a long time, only because of how easy it is to put together if you have the right ingredients, i think if you’re not going to Nando’s then this recipe is the closest thing you’ll get to that Nando’s taste anyway, so give it a try.

Ingredients:

  • 2 chicken breasts 
  • 1 bell pepper
  • 1 red chilli (or more depending how hot you like your food)
  • 4 cloves of garlic
  • 1 small slice of ginger
  • 2 tablespoons of paprika 
  • 1 tablespoon of oregano
  • juice of one lemon
  • 100 mls of olive oil
  • 2 drops of white wine vinegar and soy sauce 
  • quarter of a small red onion
  • salt and pepper to season

Step 1: This recipe is so simple, get all the ingredients except for the chicken breasts and chuck them into a food processor/blender until it turns into a smooth consistency, trying to get rid of the big lumps

Step 2: Cut your chicken breasts into thin strips

Step 3: Take your chicken and peri peri sauce and place them in an oven bag and seal, let it marinate in the fridge for a good 2 hours or so, afterwards place the oven bag in the oven at 180° for 40 minutes

Step 4: After your chicken has been in the oven for 40 minutes, cut the bag open and put everything into a pan and fry on a high heat for a good 5 minutes, you want to give it a nice crisp skin

Step 5: After all that, you should be left with some very tasty peri peri chicken that you can do whatever you want with, personally i like it in a wrap with some rocket and grated cheese

Deep Fried Deep Chicken

I’ve always been a fan of deep fried chicken, before i did do a recipe showing how to do oven baked chicken, but here’s one on how to do a deep fried one, i don’t like the overly done greasy kfc chicken, this is clean and slick and awesome.

Ingredients:

  • 2 chicken legs
  • 1 cup panko bread crumbs 
  • 1 cup self raising flour
  • herb & spice mix (paprika, cayenne pepper, salt, pepper, garlic power, onion power, sage and basil)
  • buttermilk (which is milk with a drop of lemon juice in it, also add 2 cloves of garlic)

Step 1: You want to let your chicken marinate in the buttermilk overnight, making this is pretty simple, just put your herb & spice mix, flour and panko in the same bowl and mix them up, put the chicken in the mix and give it a good coating, then put the chicken back in the buttermilk and back in the mix again, for a good double coating.

Step 2: Have your oil ready, up to about a medium heat, sprinkle some flour in it and if it floats then the oil is hot enough, carefully place the chicken in the oil and let it cook for around 15 minutes.

Step 3: Carefully take your chicken out of the oil and let it rest for 10 minutes on a rack, then your chicken is all yours to enjoy!

Mediterranean Full English

So i’ve been thinking about ways to try and enjoy the usual grease feasts that we all enjoy but adding some more healthier options to them, i’m a sucker for a full english, or welsh depending where you are, this is a recipe i’ve come up with that really does tickle the taste buds.

Ingredients (enough for 2 people):

  • 2 eggs
  • parma ham
  • sausage meat that has been rolled up into little balls
  • 1 slice of wholemeal bread cut into 1cm squares
  • a mixture of chickpeas and sweetcorn (soaked in oyster & light sou sauce, lemon juice and a dash of honey)
  • some rosemary
  • chopped tomato juice
  • couple of mushrooms
  • 1 tomato

Step 1: Preheat the oven to 200°, cut the tomato in half and with the mushrooms, put them on your oven tray, drizzle them in olive oil, season with some salt and pepper and put them into the oven for 10 minutes, whilst there in, chuck your chickpeas and sweetcorn into the pan and fry on the medium heat for 5 minutes, after that add in the tomato juice and continue to cook for another 5 minutes

Step 2: In another pan on a medium heat, drizzle some olive oil and add in the sausage balls, parma ham, cut up bread and the rosemary, the parma ham only needs about a minutes because its so thin so remove from the pan when it starts to go crisp, for the rest cook for 10 minutes.

Step 3: Take your mushrooms and tomatoes out of the oven, in the oven dish make some room, put in your chickpea and sweetcorn mix, sausage balls, parma ham, cut up bread and the rosemary, with the space left, crack open an egg and sorta make a well with it, put it back into the oven again for another 10 minutes.

Step 4: After 10 minutes take it out of the oven and let it cool for 2 minutes, but hey it’s all yours to eat, my healthier take on it anyway, and i enjoyed it very much.

Rosemary Potato Cakes

I’m always up with trying to create new recipes and exploring how different flavours work, this is one such experiment with a surprising outcome, give it a try. 

Ingredients:

  • 4 peels potatoes
  • half an onion
  • 3 rashes of smoked bacon
  • some sausage meat
  • a lot of rosemary
  • 1 egg
  • cup of flour
  • 2 garlic cloves
  • 2 bay leaves

Step 1: Pre heat the oven to 200°, finely chop up the garlic, onion, bacon, sausage meat, rosemary and fry on a medium heat in some olive oil, just sorta browning them, take them out and let them cool, at the same time, poach the potatoes with the bay leaves for 5 minutes, no more, drain them and let them cool also.

Step 2: After your potatoes have gone cold, grate them and make sure you get rid of all the excess water.

Step 3: In a bowl add in all the ingredients and mix them together

Step 4: Get two sheets of baking paper and put the mixture onto one, put the other one of top and flatted it out using a tray, until about 1-2cm’s thick, put it into the oven for 20 minutes

Step 5: Take it out of the oven and let it cool, get a circle cutter and cut out as many circles as you can.

Step 6: Get the cakes and fry them in some butter, medium heat, 3 minutes each side, let them cool down and the potatoes are all yours to enjoy.

Colourful Meaty Meat Meat Lasagne

Maybe i’m losing the plot with the names of these dishes.. but i’m running out of ideas here, i made a vegetable lasagne on here pervious so it’s pretty much the same concept without the chilli and lots and lots of meat, give it a try. 

Ingredients: 

  • packet of minced meat
  • 2 rashes of bacon
  • 2 sausages
  • 1 red onion
  • 1 red pepper
  • tin of sweetcorn
  • spice & herb mix (paprika, cayenne pepper, salt, pepper, thyme)
  • diced cheese
  • flour and butter (for the sauce)
  • 2 garlic cloves
  • lasagne sheets
  • tin of chopped tomatoes

Step 1: Finely chop up your onion and pepper, and sweat down in the pan with some olive oil, after it starts to get some colour, crush in some garlic, if you put it in straight away it’ll only burn, at the same time, in a different pan, in goes your mince meat, cut up your sausages and bacon and add in, start to cook on a medium heat, after the mince meat has start to break down, add in your herb and spice mix, continue to cook both pans on a low heat for 5 minutes and combine.

Step 2: I’ve made white sauce plenty of times so go back on my blog and look, ya know melt some butter, add in the flour, create a paste, put some milk in, then add the cheese and so on.. get out your tinned tomatoes and put them in a blender, add in a little salt, pepper and basil too for much a kick and thats the sauces out of the way.

Step 3: Get out your oven dish and fill it with a layer of our meat and veg mix, place the lasagne sheets on top and then add the sauces, sort like i’ve done in the pictures, try and get an even layer of each sauce and repeat, finish with a top layer of sauce and give a swirl because it looks nice.. then just add a layer of grated cheese on top.

Step 4: Put it into the oven at 180° for 45 minutes

Step 5: Take it out and let it cool for 10 minutes, it’ll be piping hot! and yes it’s all yours for you to enjoy, have some peas with it or something i dunno, but hey if you do decide to make it, hope it tasted as good for you as it did with me, orgasmic!

Ultimate Fish Pie

So i like fish, and i like pie and when you put the two together you get some glorious concoction of flavours that all bounce off each other, it’s a pretty easy recipe if done right.

Ingredients:  

  • bowl of prawns
  • mixed fish (usually buy a pack from any supermarket)
  • 1 carrot
  • 2 celery sticks
  • quater red onion
  • 2 fish stock cubes
  • diced cheese
  • maris piper potatoes
  • flour and butter on the stand by

Step 1: Pre heat your oven to 210°, roughly chop the celery, carrot and onions, add in 600mls of boiling water with the 2 fish stocks, boiling away from 10 minutes, bring the heat down and add in the fish and prawns and let them simmer for 3 minutes, remove the fish and prawns and put into a bowl to cool, discard the rest of the vegetables, keeping the fish stock.

Step 2: Peel the potatoes, chop them up, add them to boiling water with some salt and simmer away for 15 minutes, you can tell when a potatoes cooked by poking it with a knife, if it slides through nicely then its cooked, at the same time put your fish stock back onto boil and reduce by half

Step 3: Get a clean pan, melt a good dab of butter and mix in plain flour until it starts to turn into a paste, continue to cook on a low heat for 3 minutes, slowly start to add in the fish stock, constantly stirring, don’t worry about it looking lumpy, that will dissolve, as it starts to thicken, add in the diced cheese and continue to stir until a smooth texture is created.

Step 4: Drain your potatoes, and mash them, add in some butter and a little milk to help give it a smooth texture, also add in some salt and pepper to give it a kick, get your now cooled fish and put it into the oven dish, flattening as much as you can, add in your fish sauce over, then add your mash potato on top and even it out, (add a little butter on top to give it a good crust) put it into your oven at 210° for 25 minutes

Step 5: Take your pie out of the oven (if you want to give it more of a crust, put it on the oven grill for 5 minutes) let it cool for 5 minutes and it’s all yours to eat, and it does taste very very nice.

Cheesy Garlic Mushroom Pockets

Christmas is coming and these little pockets are very easy to make, don’t taste half bad too.

Ingredients:

  • bowl of mushrooms
  • puff pastry 
  • spice and herb mix (paprika, salt, pepper, thyme and sage) 
  • 1 egg
  • 2 cloves of garlic 
  • blow of grated cheese

Step 1: Chuck the mushrooms in an oven dish, with a garlic crusher, add the garlic in with the herbs and spices and coat with olive oil, mix it up and put into a pre heated oven at 200° for 15 minutes

Step 2: Take the mushrooms out and put them to one side, flour a clean surface and roll out your puff pastry, using a cutter, find a size that is a little bit bigger than the mushrooms

Step 3: Take the stalks out of the mushrooms, you’ll need 2 cuts out, place the mushroom on the pastry and add a little cheese on top, dab around the edges with some water and place the second cut out on top, sealing

Step 4: Whisk an egg and give each of the parcels a good coating, then just add some more cheese on top, place in the oven at 220° for 15 minutes, take them out, let them cool for 10 minutes and it’s all yours to consume
