So i’ve been away from this blog for a while because i’ve actually had a job! working in a local kitchen which is great because i’m learning a lot from a very talented chef but yes, my day off today so i thought i’d try create something new, and that something is the pizza bite! just think of it as a sausage roll but a pizza instead.
- 250g 00 flour
- 1 sachet of yeast
- 1 teaspoon of caster sugar
- extra virgin olive at the ready
- mushrooms, smokey bacon, red onion, garlic and parma ham for the stuffing
- fresh basil
- dried mixed herbs, salt and pepper
- WATER! (lukewarm)
- mozzarella and cheddar cheese (lots)
- any jared pasta sauce (too lazy to make my own)
Step 1: First off, i got the mushrooms, garlic, red onion, smokey bacon and parma ham and blitzed it in a food processor, just so i don’t have awful chunky bits, okay.. into the mixer, add in the flour and a pinch of salt, in a jug, fill it up with 400mls of lukewarm water, add in the yeast, sugar and a drop of olive oil (extra virgin), give a stir and leave it for 5 minutes, next slowly (SLOWLY DAM IT) add in the water to the mixer, until the flour comes together into a nice ball shape and continue to let it go for another 10 minutes (the kneading process), give it a dash of olive oil (extra virgin) so it doesn’t stick to the bowl and let it prove for an hour in a warm place, covered with a wet towel.
Step 2: That blitzed mixture we created earlier, give it a quick fry and a low heat for five minutes
Step 3: After an hour your dough should have doubled in size, flour a surface and roll it out to about half a centimetre thick, this is a pretty easy process, first cover it in a layer of your chosen tomato sauce, second add on the mixture we created with some fresh basil too, third just demolish it with the cheese (give it a good sprinkle of salt, pepper and mixed herbs)
Step 4: Next very carefully roll it up, almost like you would a burrito and just leave it set for 10 minutes, next slice them up into maybe 2 centimetre thick slices and place them onto an oven tray covered in olive oil, preheat your oven to 200° and let them bake for a good 20 minutes.
Step 5: After 20 minutes, take the tray out of the oven and let it cool, and there you have your very tasty pizza bites, enjoy!
