A very simple recipe that can be put together quicker than it actually takes the line the tin, for all you coconut heads out there.
- 200g self raising flour
- 200g butter
- 100g caster sugar
- 100g demerara sugar
- 2 teaspoons of baking power
- 2 tablespoons of coconut milk
- 150g desiccated coconut
- 3 eggs
Step 1: Preheat the oven to 180°, Very simply combine the butter and two sugars then crack in the 3 eggs and mix, sift in the flour and add in the desiccated coconut and baking power, once combined add in the coconut milk until its a nice smooth consistency
Step 2: Line your tin with baking paper (butter helps it stick), and pour in the mixture, give it a tap on a hard surface to knock out any air bubbles and make sure its spread even, place it into the oven at 180° for 40 minutes, let it cool and it’s yours to enjoy.
