Peri-Peri Chicken

I’ve been meaning to do this recipe for a long time, only because of how easy it is to put together if you have the right ingredients, i think if you’re not going to Nando’s then this recipe is the closest thing you’ll get to that Nando’s taste anyway, so give it a try.

Ingredients:

  • 2 chicken breasts 
  • 1 bell pepper
  • 1 red chilli (or more depending how hot you like your food)
  • 4 cloves of garlic
  • 1 small slice of ginger
  • 2 tablespoons of paprika 
  • 1 tablespoon of oregano
  • juice of one lemon
  • 100 mls of olive oil
  • 2 drops of white wine vinegar and soy sauce 
  • quarter of a small red onion
  • salt and pepper to season

Step 1: This recipe is so simple, get all the ingredients except for the chicken breasts and chuck them into a food processor/blender until it turns into a smooth consistency, trying to get rid of the big lumps

Step 2: Cut your chicken breasts into thin strips

Step 3: Take your chicken and peri peri sauce and place them in an oven bag and seal, let it marinate in the fridge for a good 2 hours or so, afterwards place the oven bag in the oven at 180° for 40 minutes

Step 4: After your chicken has been in the oven for 40 minutes, cut the bag open and put everything into a pan and fry on a high heat for a good 5 minutes, you want to give it a nice crisp skin

Step 5: After all that, you should be left with some very tasty peri peri chicken that you can do whatever you want with, personally i like it in a wrap with some rocket and grated cheese
