I’ve always been a fan of deep fried chicken, before i did do a recipe showing how to do oven baked chicken, but here’s one on how to do a deep fried one, i don’t like the overly done greasy kfc chicken, this is clean and slick and awesome.
- 2 chicken legs
- 1 cup panko bread crumbs
- 1 cup self raising flour
- herb & spice mix (paprika, cayenne pepper, salt, pepper, garlic power, onion power, sage and basil)
- buttermilk (which is milk with a drop of lemon juice in it, also add 2 cloves of garlic)
Step 1: You want to let your chicken marinate in the buttermilk overnight, making this is pretty simple, just put your herb & spice mix, flour and panko in the same bowl and mix them up, put the chicken in the mix and give it a good coating, then put the chicken back in the buttermilk and back in the mix again, for a good double coating.
Step 2: Have your oil ready, up to about a medium heat, sprinkle some flour in it and if it floats then the oil is hot enough, carefully place the chicken in the oil and let it cook for around 15 minutes.
Step 3: Carefully take your chicken out of the oil and let it rest for 10 minutes on a rack, then your chicken is all yours to enjoy!
