Mediterranean Full English

So i’ve been thinking about ways to try and enjoy the usual grease feasts that we all enjoy but adding some more healthier options to them, i’m a sucker for a full english, or welsh depending where you are, this is a recipe i’ve come up with that really does tickle the taste buds.

Ingredients (enough for 2 people):

  • 2 eggs
  • parma ham
  • sausage meat that has been rolled up into little balls
  • 1 slice of wholemeal bread cut into 1cm squares
  • a mixture of chickpeas and sweetcorn (soaked in oyster & light sou sauce, lemon juice and a dash of honey)
  • some rosemary
  • chopped tomato juice
  • couple of mushrooms
  • 1 tomato

Step 1: Preheat the oven to 200°, cut the tomato in half and with the mushrooms, put them on your oven tray, drizzle them in olive oil, season with some salt and pepper and put them into the oven for 10 minutes, whilst there in, chuck your chickpeas and sweetcorn into the pan and fry on the medium heat for 5 minutes, after that add in the tomato juice and continue to cook for another 5 minutes

Step 2: In another pan on a medium heat, drizzle some olive oil and add in the sausage balls, parma ham, cut up bread and the rosemary, the parma ham only needs about a minutes because its so thin so remove from the pan when it starts to go crisp, for the rest cook for 10 minutes.

Step 3: Take your mushrooms and tomatoes out of the oven, in the oven dish make some room, put in your chickpea and sweetcorn mix, sausage balls, parma ham, cut up bread and the rosemary, with the space left, crack open an egg and sorta make a well with it, put it back into the oven again for another 10 minutes.

Step 4: After 10 minutes take it out of the oven and let it cool for 2 minutes, but hey it’s all yours to eat, my healthier take on it anyway, and i enjoyed it very much.
