Ultimate Fish Pie

So i like fish, and i like pie and when you put the two together you get some glorious concoction of flavours that all bounce off each other, it’s a pretty easy recipe if done right.

Ingredients:  

  • bowl of prawns
  • mixed fish (usually buy a pack from any supermarket)
  • 1 carrot
  • 2 celery sticks
  • quater red onion
  • 2 fish stock cubes
  • diced cheese
  • maris piper potatoes
  • flour and butter on the stand by

Step 1: Pre heat your oven to 210°, roughly chop the celery, carrot and onions, add in 600mls of boiling water with the 2 fish stocks, boiling away from 10 minutes, bring the heat down and add in the fish and prawns and let them simmer for 3 minutes, remove the fish and prawns and put into a bowl to cool, discard the rest of the vegetables, keeping the fish stock.

Step 2: Peel the potatoes, chop them up, add them to boiling water with some salt and simmer away for 15 minutes, you can tell when a potatoes cooked by poking it with a knife, if it slides through nicely then its cooked, at the same time put your fish stock back onto boil and reduce by half

Step 3: Get a clean pan, melt a good dab of butter and mix in plain flour until it starts to turn into a paste, continue to cook on a low heat for 3 minutes, slowly start to add in the fish stock, constantly stirring, don’t worry about it looking lumpy, that will dissolve, as it starts to thicken, add in the diced cheese and continue to stir until a smooth texture is created.

Step 4: Drain your potatoes, and mash them, add in some butter and a little milk to help give it a smooth texture, also add in some salt and pepper to give it a kick, get your now cooled fish and put it into the oven dish, flattening as much as you can, add in your fish sauce over, then add your mash potato on top and even it out, (add a little butter on top to give it a good crust) put it into your oven at 210° for 25 minutes

Step 5: Take your pie out of the oven (if you want to give it more of a crust, put it on the oven grill for 5 minutes) let it cool for 5 minutes and it’s all yours to eat, and it does taste very very nice.
