Chicken & Mushroom Soup

This is a simple and quick recipe thats full of flavour, better than anything you’d get in a tin can, of course this recipe involves chicken, so if your a vegetarian follow the recipe and just miss out the chicken.

  • mushrooms
  • 1 onion
  • 1 vegetable stock cube
  • 1 clove of garlic
  • 1 chicken breast (+ chicken skin)



Step 1: Chop up the onion and mushrooms, not too fine, on a separate board cut up the chicken into small square pieces


Step 2: In a pan, fry the chicken skin with a little dabble of olive oil, after 5 minutes add in the onion, mushrooms and garlic and continue to fry for another 10 minutes, at the same time in another saucepan put the diced up chicken breast in and let it boil away for 10 minutes 







Step 3: In a different saucepan add in the onions, mushrooms and remove the chicken skin, add in a pint of water with the vegetable stock and boil away for 5 minutes, next blend with all together and add in the cooked chicken pieces last




Step 4: Serve up and it’s ready to eat, like i said before, if you’re a vegetarian then just miss out the chicken all together, enjoy
