So barbecue chicken has the best of both worlds being sweet and spicy, the flavour i’m going for is more towards the sweet side with a bit of kick from the spice, the way i’m cooking this chicken is to help maximise the flavours so don’t panic, i just love chicken man.
- 1 whole chicken
- bbq rub (3 tablespoons paprika, 1 tablespoon pepper, 2 tablespoons hot chilli power, 1 tablespoon cayenne pepper, 2 table spoons mixed herbs, 2 tablespoons garlic power, 2 tablespoons onion power, 2 tablespoons salt)
- worcester sauce
Step 1: You’ll need a big bowl or whatnot that can fit the chicken into, fill it with water so the chicken is covered and put in half the bbq rub and 3 tablespoons of worcester sauce, mix it up and leave it to marinate overnight
Step 2: The chicken now needs to be boiled in the marinade, let it boil away for no more than 15 minutes on a medium heat, take the chicken out and let it cool
Step 3: Drizzle the chicken with a small amount of olive oil and apply the rest of the bbq rub, making sure every inch is covered, put it into the oven at 210° for 20 minutes
The chicken will be so tender it will just pull off the bone
