Victoria Sponge Fingers

So everyone loves cake, if you don’t then why are even reading this! this is the most simple simple recipe, i can always remember my mum letting me cook sponges when i was little because of how simple they were, and obviously licking the spoon was the best part, so here we go.


  • 8oz self raising flour
  • 8oz butter
  • 8oz caster sugar 
  • 4 eggs
  • vanilla extract
  • jam


Step 1: Pre heat the oven to 180°, using your hands cream together the butter and sugar until it is all mixed



Step 3: Add in the eggs, one at a time, as well as two tablespoons of vanilla extract, next add in the flour and mixed until combined, put the mixture into a square oven tray, i’m using silicon one because it doesn’t stick, otherwise line it with butter and baking paper (look at previous recipes for an example) just before i put it in the oven i sprinkled some chocolate on, because you know.. chocolate.. put it into the oven at 180° for 25 minutes



Step 4: Take your sponge out of the oven and let it cool down for half an hour, the best way to check its done is to use a skewer, if it comes out clean then your cake sponge is cooked, if not then put it in for another 10 minutes, after it’s cooled, very carefully use a bread knife to cut the sponge in half, cover the bottom side in a layer of thick jam and put the top later back on, cut up into rectangles and you have your Victoria sponge fingers ready to eat
