Chargrilled Red Pepper Hummus

Hummus for me is a bit of a guilty pleasure, in a night i can easily sneak through a tub whilst snacking on some breadsticks, this homemade recipe is the perfect mix between sweet and savoury.

Ingredients:

  • 1 sweet red pepper
  • juice of one lemon
  • spice mix (salt, pepper, cayenne pepper and cumin)
  • 1 tin of chickpeas 
  • 1 clove of garlic 
  • 3 tablespoons of olive oil 
  • 1 tablespoon of tahini

Step 1: Place your pepper on the hob on the full heat, you’ll hear little bursts as the skin starts to char, keep turning the pepper every other minute until the whole pepper is charred

Step 2: Take your pepper and place it in the fridge for 10 minutes to cool down, use your fingers to pull away the skin which should just peel off, make sure to take out the seeds and chop up into decent size pieces

Step 3: Place all of the ingredients into the blender and blend, adding in the olive oil a bit a time until it starts to come together, the thickness of the hummus depends on how you like it, personally i like it quite smooth so ill add a dash of water to bring it together, if you like it chunky then use less oil and water

Step 4: Serve up however you desire
