It is true, winter is coming and what better way to prepare than to cook up a simple vegetable soup, for how simple this is, it’s still one of my favourite comfort foods.
- 3 white potatoes
- 3 carrots
- 1 large leek
- 1 onion
- 2 vegetable stock cubes
- quarter slice of butter
Step 1: Finely chop the onion but leave the carrots, potatoes and leeks in nice big chunks
Step 2: For this i’m using a pressure cooker, only because it’s something i’ve used all my life, its quicker and creates more intense flavour i find, if you don’t have a pressure cooker just use a plain pot, melt the butter and chuck in the vegetables
Step 3: Sweat the vegetables down, don’t brown them, after 5 minutes add boiling water to cover the vegetables and add the vegetable stock and let it boil away for another 5 minutes
Step 4: Add more water, if using the pressure cooker, boil away for 15 minutes on a medium heat, remember to keep an eye because of the pressure, if it starts to steam, turn the heat down, if using a normal pot, just let it boil away for an hour an a low heat
Step 5: Season with salt and pepper and its ready to serve, personally i like to add some grated cheese and some cress on top, enjoy!
