Rosemary Scotch Eggs

Scotch eggs are always a lovely savoury treat, though they do look complex, the main ingredients are only egg, sausage meat and breadcrumbs, so it’s quite easy to put together with a bit of practice.

Ingredients:

  • 3 eggs (1 as a wash)
  • 4 good brand sausages (take the skins off)
  • a good bowl of breadcrumbs
  • salt, pepper, paprika and rosemary

Step 1: Place both the eggs into boiling water and put on a low simmer for 10 minutes

Step 2: After 10 minutes drain the boiling water, and refill with cold water, let the eggs cool down for 5 minutes

Step 3: When the eggs have cooled down, crack them gently on the side and use your nails to peel away the shell until there both ready

Step 4: Take your sausage meat, sprinkle some salt, pepper, paprika and rosemary over it and split it in half, use your hands to make a burger shape and place the egg in the middle, then place the meat around the egg until your form a ball shape

Step 5: Whisk an egg and wash your scotch egg all over, it’ll help the breadcrumbs stick, proceed with that until the whole thing is covered in the crumbs

Step 6: Sprinkle some more rosemary over them and place both the scotch eggs into the deep fat fryer at 150° for 8 minutes

Step 7: Take them out of the fryer and let them cool down for 10 minutes, after that they’re ready to eat, enjoy
