Ultimate Meatloaf

I’ve always been a fan of meatloaf (not the singer, well except fight club), in theory it is just a big chunk of meat mixed with various things, so i wanted to see if i could come up with my own recipe and put my own twist on it, and it is dam good.


  • 1 egg
  • handful of bread crumbs
  • 1 pound of ground beef
  • 2 sausages
  • quarter of one red onion
  • spice & herb mixed made up of one table of salt, pepper, cayenne pepper, paprika, basil, rosemary, thyme and marjoram
  • pre packed puff pastry
  • candy bacon (optional)
  • parmesan cheese
  • 1 clove garlic


Step 1: Finely chop the onion and garlic, sweat down for 5 minutes on a medium heat, not letting them brown


Step 2: Into the bowl go your ground beef, egg, herbs and spices, breadcrumbs, onions and garlic, candy bacon and with the sausage meat, just remove the skin


Step 3: Use your hands to mix everything up, get them dirty


Step 4: Grab 4 little cake tin moulds, grease them with olive oil and divide the mixture into 4 balls, firmly push each balls down into the mould, making sure there are no air pockets


Step 5: Place them on a tray and into the oven they go at 180° for 20 minutes, they’ll come out nice and browned and should easily fall out their moulds, keeping their shape


Step 6: Flour a surface, and roll out your puff pastry to a decent size and divide into four quarters, grate the parmesan cheese over it, grab one of the meatloaf’s and encase it in the pastry, if there isn’t enough pastry, unfold it and roll it out to a bigger size, use a sharp knife to gently score the tops, whisk an egg and brush it over them to help give them more of a golden crust and grate more parmesan cheese on top, place onto a tray with baking paper and put into the oven at 210° for 25 minutes



Step 7: Take them out of the oven when crispy golden, and there you have my own take on the classic american meatloaf, it actually tastes pretty good too!
