Easy Spicy Vegetarian Lasagna

I’m a big sucker for a good cheesy lasagna, even though i do eat a lot of meat, i do really enjoy quorn as well, obviously just replace the quorn mince with actual beef mince for all you meat heads, but this is a simple one.


  • 1 sweet pepper
  • 1 red onion
  • pack of quorn mince
  • 2 tins of chopped tomatoes
  • packet of pasta sheets 
  • *for the white sauce, look at the recipe in my leek and chicken pie
  • 1 clove of garlic 
  • 1 red chilli
  • 2 sticks of celery 
  • hand full of mushrooms    


Step 1: Roughly chop up the celery, mushrooms, chilli, pepper, garlic and onion 


Step 2: Oil in the pan and sweat the vegetable down on a medium heat; you don’t want to start browning them, at the same time, start to cook your mince on a medium heat as well. 


Step 3: After the mince starts to brown a little, add it to the vegetable mixture, and continue to cook on a medium heat for 10 minutes, this is the time to start thinking about what sorta of spices you want in it, i like to add salt, pepper, cayenne pepper and paprika to help give it a bit of a kick


Step 4: Now this is the white sauce, if you go down to my previous pie recipe you’ll see how to wip it up in less than than 5 minutes


Step 5: I forgot to take a picture of the tomato sauce but what i tend to do is empty 2 cans of chopped tomatoes into a blender, add some herbs such as basil, oregano and thyme and blend, now get your oven dish out, create a bottom layer of tomato and white sauce, then add some of our filling and spread it out, and then add another layer of sauce, then add your sheets of pasta and repeat


Step 6: After a while you should have built up enough layers to fill the dish, top it off with more tomato and white sauce, you can add some cheese to the top to help give it a crispy finish, put into the oven at 180° for 35 mintues


Step 7: Take your creation out of the oven, let it cool a little and eat away
