Super Chicken, Leak & Mushroom Pie

One of my favourite things to cook, It’s a simple recipe if you follow the steps right and god dam tasty.


  • 2 chicken breasts
  • 1 leek
  • hand full of mushrooms
  • 1oz butter
  • 1oz flour
  • 1oz cheddar cheese
  • 100ml milk
  • Pre packed puff pastry


Step 1: Pre heat the oven to 200° and finely chop the leeks, mushrooms and chicken breasts



Step 2: Put some oil to the pan and sweat down the leeks and mushrooms, you don’t want to brown them because they’ll continue to cook when in the oven


Step 3: My tip for the perfect chicken is not to fry it at all, rather boil it, this way it stays super tender, i also like to add a vegetable stock to help add more flavour, but thats totally up to you, boil away for around 15 minutes


Step 4: Now to start the sauce, melt the butter in a small pan and add the flour, it should almost resembled a paste like below


Step 5: Add the milk and cheese, stir constantly on a medium heat until the cheese has dissolved and your left with a nice thick sauce, add 2 good pinches of salt and pepper, depending on how you thick you want it, you can add more milk to make it more smooth, adding a vegetable stock can also enhance the flavour


Step 6: Strain off the chicken and add it to the leek and mushroom mix


Step 7: Next add the sauce to the mixture and put on a low heat for 5 minutes, i also like to add a bit of paprika and cayenne pepper for a bit of kick


Step 8: Put your mixture into your dish, flour a surface and roll out your puff pastry to an area a bit bigger than your dish, place the pastry over the dish, getting rid of any air bubbles, use your fingers to pinch around the edges to help steal it, if you wish to decorate your pie, thats up to you, personally i like to do so, whisk an egg and brush the pastry to help give it a lovely golden crust, next put it in the oven at 200° for 20 minutes




Step 9: Let it cool and eat that bad boy
