Blueberry Muffins

Literally the easiest recipe going, it’s so simple anyone can do it, but i’m a sucker for making these, about 2-3 times a week so here’s the recipe.



  • 4oz self raising flour
  • 4oz unsalted butter
  • 2.5oz caster sugar
  • 2 eggs
  • vanilla extract
  • a load of blueberries
  • 1tsp baking power

Step 1: Pre heat the oven to 200°, in goes the butter and caster sugar, make sure the butter is at room temperature otherwise it’ll be hard to mix


Step 2: After the butter and caster sugar is mixed, you should end up with something like this


Step 3: In go your 2 eggs and 2 generous swigs of vanilla extra and mix (grandma’s old whisk making another appearance)


Step 4: Sift in the flour and combine, don’t over mix it otherwise it will become to thick, if it’ll become too thick, add a tiny drop of milk


Step 5: Fold in the blueberries, not too many otherwise the muffins will collaspe when you try to eat them


Step 6: I find using an ice cream scoop works really well when scooping them into the cases, so yes you should do that, put into the oven at 200° for 20 minutes


Step 7: If you followed all those steps you should end up with these, if you have not then may god have mercy on you


Step 8: EAT!
