Lemon Drizzle Cake

So my first ever recipe! Welcome to my blog, for a long time i’ve been told to create a blog about my food and gaming quests, so here i am and first off here’s a very simple recipe for a delicious lemon drizzle cake.

  • 225g unsalted butter (softened)
  • 225g self raising flour
  • 225g caster sugar
  • 4 eggs
  • 2 lemons

  • Juice of 2 lemons
  • 85g Caster sugar

Step 1: Pre-heat the oven to 200°, beat together the sugar and butter, personally i like using my hands (messy) but it does help cream well.

Step 2: Add in the eggs to the mixture, one at a time to help bring it all together (using my grandma old mixer because it works a treat)

Step 3: Sift in the flour to the mixture.

Step 4: Grate in the zest of 2 lemons and mix together.

Step 5: Cut out your baking paper to suite the shape of your tin, line the inside of the tin with butter, the butter will help the paper stick to the tin, then butter the inside of the paper when it’s stuck inside the tin, pour your mixture into your tin and even out, slap into the oven at 200° for 45 minutes.

Step 6: For the drizzle, just combine and mix the juice of two lemons with the caster sugar.

Step 7: Use a skewer, insert it into the centre of the cake, if it comes out clean your cake is ready, if not it could still be cooked a little longer. Let your cake cool down for 15 minutes and place it onto a baking tray. Get your drizzle and drizzle it over the top of your cake and let it set.

Step 8: EAT!
